2. Ministry update  

Dear Friends,

Time is marching on in what appears to be an accelerated
pace as we turn the calendar and greet yet another month.
Though every day we edge closer to spring, remnants of a
hard winter continue to linger. Snow storms descend on a nearly
weekly basis with frigid temperatures and bone-chilling winds.
Snow accummulation is at a record high. So it is that spring is
having a tough time breaking through. Nevertheless, we know we
will see the ground again!

While some wrestle with weather issues, those of us at The Living
Way are sailing along on the high sea of superior health. In the last
few weeks, new opportunities to spread the health message have
come our way. I am glad to bring you up to speed with the latest
reports.

Our third annual LIVE FOOD DINNER last month was another
refreshing success.
Nearly twenty live food enthusiasts braved
potentially bad weather to enjoy a live feast and lively fellowship at
our local public library. The food was fantastic and conversation was
warm and genuine. The evening flew by all too quickly. We all
agreed that more 'live events' are needed, so we are considering
our options, one of which is LIVE FOOD CLASSES. A local friend
and fellow live foodist has presented us with a venue where we could
hold Live Food Classes. The rural setting is inspiring and the kitchen
facility is suited perfectly for demonstrations. If live food classes
interest you, let us know.Your response will help us determine our
course of action.

Speaking of hands-on experiences, I will be performing a live
food demonstration in association with Hannaford's
supermarket next month at the annual World of Women's
Wellness at Inland Hospital.
We have wanted to participate in
this event since its inception a few years ago. Therefore I am
pleased that Hannaford asked me to team up with them for a food
demonstration. My part, of course, will be a live food specialty.

Also, David Wolfe is coming to Maine. David, as you may know,
is an internationally acclaimed raw foodist and nutritionist, considered
by many as the father of the raw food movement. David will be
accompanied by fellow raw foodist, Daniel Vitalis. Both men will share
their knowledge, expertise, and experience with raw food. If you are
interested in meeting David during his rare, if not first appearance in
Maine, see our Living Resource section below for more details.

3) Feature Article: "Body Chemistry (Part 1)- Acid vs. Alkaline"

Chemistry was not a subject that I pursued in school, nevertheless,
when the Hallelujah Diet entered my life, I suddenly became keenly
interested in the subject. The impact of live food vs. dead food on the
human body can only be described as profound. While the intrigue of
nutrition is multifaceted, the affects of diet can be reduced to simple
chemistry: acid vs. alkaline. This measurement is technically known
as pH, potential Hydrogen. While pH and its relationship to health is
a study in itself, this writing will serve to address the acid/alkaline
factor in brief.

Research proves that all systems of the human body are affected by
the pH level of the blood. According to health professionals, the
average pH of the body should be around 7.3, though some experts
believe that 6.8- 7.4 constitutes a safe range. However, all agree that
below or above this range can precipitate adverse symptoms,
including sickness and disease. An abnormal pH level has been
shown to

1) trigger microorganisms in the blood to mutate, become
pathogenic, and proliferate
2) cause constructive enzymes to become destructive
3) suffocate cells
4) throw off the efficiency of insulin to control the delivery of
glucose to the brain. The brain cannot function with sufficient
levels of glucose (sugar).
5) interfere with the electro-magnetic exchange in heart cells,
causing irregular heartbeat and accummulation of plaque on
arteries.

6) interfere with mineral assimilation
7) cause the thyroid gland (which regulates metabolism) to
malfunction

In light of these biological shortfalls, one might rightly ask, what
causes the pH level to err, especifically on the side of acidity?
The answer is simple but multifacted. An acid pH is the result of
a poor lifestyle that is expressed but not limited to:

1) DIET- cooked, processed, animal-based (meat, dairy, seafood).
These foods contain little to no nutrition and leave an acid edge in
the body. Refined grains, refined sugar, refined ("table") salt,
coffee, soda pop, etc. are acid-forming foods. When they are
ingested, they immediately alter the blood, causing the body's
defense system to neutralize the acid brought in by the
'foreign invader(s).'
2) WATER- Most drinking water, especially tap water, is acidic in
nature since it contains harmful chemicals such as fluoride and
chlorine, both of which are poisonous. Also acidic are most bottled
waters (including distilled), flavored waters, and 'mountain'/'spring'
waters.
3) ALCOHOLIC BEVERAGES- Beer, wine, and hard liquor create
an acid environment in the body because they are unnatural
substances.
4) SMOKING- adds a toxic overload of heavy metals, especially
cadmium, to body cells, causing an acidid reaction.
5) FOOD ADDITIVES- Chemical food dyes, coloring, or flavor
enhancers such as nitrites, nitrates, MSG and aspartame are toxic
substances that are acidic in nature.
6) FERTILIZERS, PESTICIDES, AND HERBICIDES- Most food
sold in supermarkets is "conventionally-grown" with high levels of
chemical fertilizers, pesticides and herbicides. These chemicals
are largely neurotoxic and carcinogenic and leave an acidic residue
in the body.
7) PERSONAL CARE PRODUCTS- The majority of shampoos,
soap, toothpaste, deodorant, hair dyes, nail polish, etc. are
comprised of various forms of alcohol and chemical combinations,
all of which are toxic and therefore acidic.
8) PHARMACEUTICAL DRUGS- All drugs are toxic to the body
and create an acid environment for body cells. Many drugs also
contain heavy metals and toxic preservatives and/or additives.
9) VACCINES- Vaccines are chemical cocktails that contain
volatile, poisonous ingredients: animal and human tissues/body parts,
heavy metals, additives, and preservatives. They are foreign
substances that the body rejects, since they are acidic in nature.
10) HOUSEHOLD CLEANERS- Most cleaning products are chemically
derived and therefore caustic (acidic).
11) HOME FURNISHINGS AND BUILDING SUPPLIES- Furniture,
carpeting, panelling, paint, pressed board, etc.that is synthetic
(chemical) has a toxic, suffocating affect on body cells, causing
an acid reaction.
12) CLOTHING- Chemically-laced or derived fabrics (polyesters,
rayon, nylon, etc.) 'breathe' poisons into the body through the pores
of the skin. These poisons are acid and build up toxic residues in
the body.
13) AIR POLLUTION- Air-born chemicals and molds are unseen
health hazards that wreak havoc on body cells by creating an
acid environment.
14) PLASTIC- Petrochemicals in the form of plasic have a toxic
affect on the body and can therefore influence acidity. Rising
health problems, especially cancers, are now being linked to
wide-spread use of plastic.
15) TECHNOLOGY- Equipment such as computers, telephones,
copy machines, etc. breathe toxic chemical residues that invade
cells and cause acid build-up in the body.
16) EMFs- Electromagnetic Fields emitted by all electrical devises,
including computers, telephones, hair dryers, radios, TVs, cell
phones, microwave ovens, etc. affect body chemistry by altering
the body's frequency which, in turns, enhances acidity.
17) NEGATIVE THINKING- Entertaining thoughts that are
unproductive and/ or malcious are harmful for the body. They are
toxic for the thinker as well as for the one targeted. It is a scientific
fact that bitterness, unforgiveness, hatred, strife, jealousy,
depression, discouragement, etc. cause an acidic environment
in the body. Toxic thinking is an unnamed, often unrecognized,
disease.
18) STRESS- Poor lifestyle choices add insult to the body, causing
body cells to collapse under what might be termed 'repeated abuse.'
Such abuse causes the body to go into emergency action, also
known as an adrenal crisis. This crisis is a toxic reaction to the
body's inability to cope with the demands being placed upon it.

It stands to reason that pollution of any kind or origin, be it chemical
or otherwise, has a harmful affect on the body. Numerous studies
confirm that toxins accumulated in body cells cause an acid pH
which, in turn, is a precursor for disease. All factors considered,
it is safe to say that most Americans have a body chemistry that
is far too acidic.

Several years ago the Alliance for a Clean and Healthy Maine
conducted a study called, 'Body of Evidence: A Study of
Pollution in Maine' which examined the lives of seventeen
Mainers for toxicity levels. The sobering results of this study
became headline news, since many of these participants
tested for high levels of mercury, PCBs, and chemical
componds in their blood. Ranking high on the list of
toxicity was none other than Russell Libbey, President of
Maine Organic Farmers and Growers Association, who
has enjoyed an organic lifestyle of many years. One might
thus conclude that pollution is no respector of persons,
knows no boundaries, and affects individuals as it will. For

Suffice to say, we have become an acidic society. Acid, by nature, is
caustic, sharp, sour or bitter. Does this not describe the world
around us? Truly the world is becoming increasingly sick and and dangerous, because we have made choices that are unnatural
which is a blatant violation YHVH's laws of health and prosperity.

6) LIVING Recipe: SPROUT SPREAD

Sprouts are nutritious nuggets of life that come in a variety of
'flavors', all of which are an excellent addition to a live meal. We
grow our own sprouts in glass jars, incubating them in a warm
cupboard that enjoys a steady heat from a furnace pipe. In a
matter of days, my hidden garden produces a couple quarts of
ready-to-eat sprouts. Before serving, I green them in our sunny bay
window and then off to the kitchen they go to become part of our
salads, soups, smoothies, entrees, or crackers. Though I do not
eat many beans (except green beans), I do enjoy sprouting up
a jar of mung beans, because they are quick and easy to grow.
They also add variety to our meals and can be incorporated into
many raw recipes, one of which is given below. I hope you like it!

1 cup sunflower seeds (soaked overnight, drained, and rinsed)
2 cups mung bean sprouts (preferably self-sprouted)
1/2 cup raw tahini
2 stalks celery
few scallions or onion slices
3 large garlic cloves
1 lemon, juiced
2-3 tsp. cumin
pinch of Himalayan Living Salt

In a food processor with S blade, process all ingredients except
lemon juice and tahini. Process will, then add lemon juice and
tahini, and process again until creamy smooth. If necessary, add
couple tablespoons of water to soften consistency. Set aside
for a couple hours before serving or refrigerating.
